I don't like sweet potatoes but this would compliment any type of dish -
Pre-mix the condiments in a bowl
Tony Chachere's (see insert below) If you can't get Cajun Creole Seasoning, you can substitute
Black Pepper
Cayenne (a lot)
Stir it up.....add EVOO (extra-virgin olive oil) or oil of your choice
Cut the sweat potatoes in half moon shape and 3/8" thick
Throw everything in the bowl and stir it all up -
Set oven at 425* and place the seasoned baked potatoes on a cookie sheet or tray
Let it cook for about 20 minutes
The sweat potatoes will be creamy in the inside and instead of the sweat, you get a combination of creole seasoning spices then a tad of the sweet potatoes!
