  • Jalapeno horseyduvers...

Thanks to one of my best buds, I learned this little recipe, his name is Tackett, and they are his horseyduver concoction
Grab a bunch of big jalapenos
Slice length long thru the stem (makes a handle to hold on to)
Clean out guts, I use a grapefruit spoon
    Stuff with taco cheese
    Drizzle with teriyaki sauce
Sprinkle with bacon bits (cadillacs then)
Bake at 350 for about 40mins, or make an aluminum tray and put on the smoker
They sit real well on top of your beer can as your enjoyin!!

                            another thing to try
cut the top off the pepper, clean out seeds
stuff with mexican blend shredded cheese and bacon bits, just a touch of sour cream, and a hint of lemon-pepper seasoning, wrap in foil and grill for about 10 minutes

Got another, called Armadillo Eggs, works best with larger jalapeno, but chop off the top and clean out, stuff with fine shredded cheddar cheese, set aside, get some biscuits, like grands, on a cookie sheet, sprayed with lots of Pam, patty out real flat, take some bulk sausage, like Jimmy Dean (I like the hot), put some on the biscuit, patty out thin, not to the edges, take stuffed jalapeno, lay in the middle, and wrap up tight, put seam side down on cookie sheet, bake at 415 for 17 min. turn off oven for 3 or 4 more and ENJOY!! I always get my ingredients to room temp, easier to work with, takes some time but is sooooo worth it!!
